KANSAS CITY, Mo. — Shaun Brady’s Corn Beef Hash
Ingredients:
6oz Cooked Corn beef cut into cubes
4oz Cooked Yukon Gold Potatoes cut into large dice 2oz Sautéed Spanish onion 2tbs Chopped parsley 1oz beef demi or beef stock
2 whole eggs
Salt and pepper to taste
Method:
Step 1. In a large hot Sautee pan add the corn beef cook till golden brown .about 4 minutes
Step 2. Add Potatoes and onions cook and cook for about 2 to 3 minutes
Step 3. Add half of the beef demi and taste add rest of beef demi if needed
Step 4. Finish with fresh chopped parsley
Step 5. Top with 2 eggs how you like them cooked.
Shaun Brady’s Irish Soda Bread
Ingredients:
4 cups Flour
4 tablespoon Sugar
1 teaspoon Baking Soda
1.5 teaspoons salt
.5 stick unsalted butter small dice room temp.
1.75 cups Buttermilk
I whole egg and 2 egg yolk
1 teaspoons orange zest
1 cup Raisins
Method:
Step 1. Mix all dry ingredients together with the orange zest.
Step 2. Cut the butter into dry ingredients Step 3. Mix buttermilk and 1whole egg and 1 egg yolk together.
Step 4. Mix wet and dry ingredients together.
Step 5. Cut a cross into the dough and brush the dough with egg yolk
Cooking time and temp.
375 for 20 mins
350 for 15 to 20mins
