Summer is here! One of the things I love about living in the Midwest is the changing of the seasons. Each season brings an array of locally grown fruits and vegetables. Summer is the time to enjoy locally grown tomatoes, corn, peaches, and many more. These locally grown fruits and vegetables are bursting with flavor and nutrients. Produce that is allowed to ripen on the plant provides optimal nutrients and taste. If you haven’t been to a local farmers market, I encourage you to visit one this summer. Caprese Salad
Serves 2-3
Ingredients:
- 2 medium tomatoes
- 1 package (8 ounce) fresh mozzarella cheese
- Fresh basil leaves
- Olive oil
- Salt and pepper, to taste
- Balsamic vinegar (optional)
Instructions:
- Slice tomatoes and cheese.
- Place tomato slices in a 9×13 casserole dish.
- Sprinkle with salt and pepper.
- Top each tomato slice with fresh mozzarella & fresh basil leaf.
- Drizzle with olive oil and balsamic vinegar (if desired).
- Serve and enjoy!
