Apples are the quintessential fall fruit and who doesn’t love a fresh apple bursting with juiciness and flavor?  Hy-Vee Registered Dietitian, Kodi Watson, talks about selecting and storing apples for maximum freshness, recommendations for the best eating apples, most flavorful cooking apples and multi-purpose apples, and the role apples can play in a healthy lifestyle.

Apple Cookies

Serves 4

All you need:

1 firm apple

2 tbs peanut butter

2 tbs dark chocolate chips (at least 60% cocoa)

2 tbs coconut shreds

2 tbs crushed pecans

All you do:

  1. Cut apple into thin rings (easiest when using a Mandolin Slicer) and remove core.
  2. Spread peanut butter over one side of each ring.
  3. Top with chocolate chips, coconut and pecans.

Nutrition per serving: 191 calories, 15 g fat, 116 mg potassium, 42 mg sodium, 15 g carb, 3.5 g fiber, 3 g protein.
