The Burne End’s Burnt End recipes

1 whole brisket (15 pounds) or brisket points (6-10 pounds)

BBQ Rub: yield 2 cups
1 ½ cup paprika
1 cup kosher salt
1 cup granulated garlic
1 cup brown sugar
¼ cup granulated onion
1/8 cup chili powder
6 TBSP coarse black pepper
2 TBSP ground cumin
2 TSP cayenne pepper

In a large bowl mix all ingredients together and blend very well.
Season the meat on all sides and allow the meat to rest for at least 3 hours.
Smoke the meat for 16 – 18 hours at 160 degrees (internal temperature 180).

The Burnt End BBQ Cheezy Corn Bake
Feeds 10-12 people

Ingredients
¼ cup whole butter (unsalted)
¾ cup finely diced yellow onion
2 pieced finely diced garlic clove
16 ounces cream cheese
1/8 cup white sugar
1 ½ cup heavy cream
½ cup milk
3 ounces mild yellow cheddar shred
3 ounces Monterey jack shred
1 cup small diced smoked ham
5 ounces finely diced chives
¾ TBSP black pepper
¾ TBSP kosher salt
2 pounds frozen yellow corn (Do not thaw)

Directions:

In a large sauce pot melt the butter over med low heat. Then add the following in order: The garlic, onions, heavy cream, cream cheese, shredded cheeses, sugar, salt and pepper.

Cook over med low heat, stirring constantly (to prevent the cream from scorching) when well melted turn the heat to low, and in a blender add the milk and ¾ of a pound of the frozen corn and gently puree then mix the puree into the sauce pot and continue cooking until the sauce just begins to bubble, then remove from the heat and set aside.
In a mixing bowl add the rest of the frozen corn the chives and the ham and then mix in the sauce. Blend it in very well. Lastly transfer it into a baking dish and cover with foil, bake at 350 degrees for approximately 30-40 minutes.

THE BURNT END BBQ PIT BEANS

2 large cans (28 oz) baked beans
¾ cup diced onion
6 TBSP chili powder
1 cup brown sugar
2 cup BBQ sauce (your favorite)
2 cups ketchup
2 lbs chopped smoked brisket
2 cups water

Directions:

Mix all ingredients into a large baking pan or pot, cook in a smoker uncovered for
about 1-2 hours at 275 degrees.

*If you don’t have a smoker – add ¼ cup of liquid smoke and simmer on the stove until the beans are ready.
