Steak and Pineapple Salsa

Total Time: 30 min | Serves: 4

All You Need:

  • 1 can (15 oz.) Mandarin Oranges in 100% Juice, drained
  • 1 can (14.5 oz.) Diced Tomatoes with Garlic and Onion, drained
  • 1 can (8 oz.) Pineapple Tidbits in 100% Juice, un-drained
  • 1 lb. boneless beef sirloin steak, 1-inch thick
  • 2 tsp. Mexican seasoning
  • 1/2 cup chopped red or green bell pepper
  • (Optional) 1 Tbsp. chopped and seeded jalapeno pepper
  • 6 cups mixed salad greens

All You Do:

1. Trim fat from steak. Rub both sides with seasoning. Grill, uncovered, 12 to 15 minutes.
2. Meanwhile, for salsa, gently stir together oranges, tomatoes, pineapple, bell pepper and jalapeno.
3. Thinly slice steak across the grain. Serve steak and salsa over salad greens.
