Zucchini: Treat Yourself to Homegrown Goodness
This summer, take advantage of local vegetables in season from you own garden, local farmers market or stop by your neighborhood Hy-Vee! Hy-Vee Registered Dietitian, Tara Sallee, will show you a variety of ways to use your fresh, locally grown zucchini with easy recipes perfect for summer.
Zucchini Tots recipe:
All you need:
- 4 cups shredded zucchini
- ¼ cup chopped onion
- 1 bell pepper, chopped
- 1 ½ cups cooked quinoa
- 1 cup sharp cheddar cheese
- 3 eggs
- Herbs, salt, pepper to taste
All you do:
- Combine all ingredients in a bowl.
- Preheat oven to 350°F.
- Spray muffin tins with non-stick spray.
- Fill muffin tins with zucchini mix and pat down into tin.
- Bake for 18-22 minutes.
- Let cool and enjoy!
