The season has changed, so why not change up what you eat, too? Eric Eckard, executive chef at Seasons 52, cooked us up a dish that screams summertime!
LEMONGRASS SALMON SALAD
Serves 4
Ingredients for the salmon (marinate 24 hrs in refrigerator):
- Four 6 ounce salmon filets, boneless and skinless
- 2 lemongrass stalks, washed, split lengthwise and cut 8″
- 4 ounces toasted sesame dressing
· Purchase four wild or organic fresh salmon filets.
· Prepare toasted sesame dressing by following recipe below.
· Wash and split lemongrass stalks.
· Run a skewer through the salmon filets to make a hole.
· Thread a lemongrass stalk into the hole made by the skewer.
· Marinate salmon with toasted sesame dressing and refrigerate for 24 hrs.
· Remove marinated salmon from refrigerator and grill to your preference.
TOASTED SESAME DRESSING
Ingredients:
- 4 ounces miso paste
- 4 ounces rice wine vinegar
- 1 ounce lime juice
- 4 ounces honey
- 3 tablespoons ginger, minced
- 2 tablespoons sesame oil
- Pinch of Kosher salt
- Dash of Chipotle Tabasco
- 1 tablespoon sesame seeds, toasted (for garnish)
Ingredients for the salad:
- 12 ounces organic salad greens
- 4 ounces toasted sesame dressing
- Amount as desired: roasted red pepper, grilled pineapple pieces, jícama peeled and cut into sticks
Procedure for Dressing:
· Toast sesame seeds over medium heat in non-stick pan until golden. Keep seeds moving while toasting, do not allow to burn. Set aside.
· Combine miso paste and rice wine vinegar in a small bowl. Whisk together to a smooth consistency. Add remainder ingredients. Makes ¾ cup – use for salmon and salad
You can improvise and add any ingredients that you like, such as extra fruits like mango, orange and other crunchy garnish like toasted almonds or coconut
· Place greens in a bowl and add garnishes. Ladle toasted sesame dressing around salad and toss to coat greens evenly. Place salad on plate and add grilled salmon. Drizzle extra toasted sesame dressing on the salmon. Sprinkle toasted sesame seeds and serve with a grilled lemon, if desired.
