Grilled Pound Cake with Strawberries

Ingredients:
½ cup strawberry jelly
2 cups strawberries, fresh, washed*
1 (9-inch rectangular) pound cake
Spray oil, for grill (preferably butter flavor)
Powdered sugar, for garnish

Preheat grill for direct fire, medium heat.

Preparation:

In a small pan add jelly.  Transfer to grill and heat until fully melted, stirring constantly to prevent burning.  Remove from heat and transfer to a glass bowl. Add berries and stir to mix well.  Cover with plastic wrap and place in refrigerator to chill until needed.

On a cutting board add cake and slice into 10 to 12 slices or about 1/2 inch thick.  Spray grill with oil.  Place cake slices on grill and cook for 2 minutes on each side or until lightly toasted.  Transfer to a serving platter and top with prepared sauce.  Dust the whole platter with powdered sugar.  Serve warm.  Makes 4 to 6 servings.

COOK’S NOTE:  You can substitute different berries for this sauce, if desired.  Just make sure you match the berries with the same flavor jelly.
