California Veggie Wraps
Serves: 4
Ingredients:
- ½ cup plain Greek yogurt
- 1 avocado, mashed
- 1 clove garlic, minced
- 4 whole-wheat tortillas
- 1 cup broccoli flowerets
- ½ cup thinly sliced red onion
- 1 cup thinly sliced red peppers
- 2 cups torn pieces of spinach
- ½ cup shredded 2% Colby jack cheese
Instructions:
- In a small bowl mix the yogurt, mashed avocado and garlic together
- Spread a generous layer of avocado mixture on the tortillas, leaving a 1-inch border
- In the center evenly distribute the veggies among the four tortillas
- Top with cheese
- Roll up burrito style and eat immediately or tightly seal and serve within 1-2 days
