Shrimp and Grits

Ingredients:

  • 1 c. small diced yeloow onion                                                                                           2 t. minced garlic                                                                                                                  2 T. unsalted butter
    3 c. chicken broth
    1 c. milk
    1 c. stone ground grits
    2 c. sharp cheddar cheese
    salt and pepper to taste

Instructions

  • Cook the onions and garlic in butter over medium high heat for 6-7 minutes          Add the broth and milk, then bring to a simmer                                                              Whisk in the grits stirring constantly until all are incorporated                              Continue to cook over medium heat, stirring frequently for about 30 minutes          When the grits are tender add the cheese, then season with salt and pepper.

Shrimp

  • 1 pound medium sized shrimp, peeled and deveined
  • 8 slices thick cut bacon, roughly chopped
  • juice from 1 lemon
  • 1 cup bbq sauce
  • salt and pepper to taste

Instructions:

  • Cook the bacon until almost crisp then remove from the pan                                          Add the shrimp to the pan and cook for 5-6 minutes over medium heat                          Add bacon, lemon juice, and bbq sauce, then bring to a simmer                                      Season with salt and peppper. Serve imediately over the cheese grits
